ROOT VEGGIE QUINOA SALAD

 

Prepare your quinoa (ensure you soak, rinse then cook) 

Spinach (can use the spinach and rocket blend)

Cucumber sliced 

Pumpkin or sweet potato roasted (enough for family)

Beetroots roasted

Feta (if dairy free can leave out)

Balsamic glaze or balsamic vinegar (depending on preference)

Cooked animal protein (lamb, chicken, fish)

Optional - Handful of pumpkin seeds, sunflower seeds or walnuts.

To serve place spinach on bottom, quinoa on top, then your root veggies, feta, seeds, dressing and protein on the side or chopped on top.
